Unable to install certain apps on my MacBook Pro (15-inch, 2018) running Mojave

I have a MacBook Pro (15-inch, 2018) running Mojave 10.14.6. and am having difficulty loading Latex apps. I have privacy set to apps store and identified developers and have succeeded in loading Lyx but not MacTex, and Pandoc. I have tried copies from the various local CTAN mirrors for MacTex. The install package is loaded into Downloads OK and the checksums are correct. When I come to install the licensing verification works but the install itself is much faster than the times stated. (MacTex installer gives a timeline during the install) and the final package install ( stated as 1 min) persists for several minutes. Sometimes I get empty folders created and always the 6Gb of data etc is absent. The invitation to over ride the privacy security is absent and a mouse right click on the package icon does not produce it either. Suggestion are welcome, thanks in advance

You should be able to stop the installer with CMD+Q keys.

There are 3 different Restoe Modes btw...

Command (⌘)-R

Install the latest macOS that was installed on your Mac.

Option-⌘-R

Upgrade to the latest macOS compatible with your Mac.

Shift-Option-⌘-R

Install the macOS that came with your Mac, or the closest version still available.

Yes, Ive installed them all, Big Sur was an improvement over Catalina, & Monterey over Big Sur, Ventura, & Sonoma, not much different but lots of changes to learn.

Thanks for your advice, I have run repair, I am using Intego as an anti virus and I have done some extra investigation. Most of the Lyx and Latex related apps I have tried to download require OSX 10.15 minimum so this is the problem. Lyx and Latex are OK.This leaves me with a dilema I have just completed 5 years work on a project and I have used ArcGIS /Win 10 through bootcamp - I must not loose this and may be required to access to it for the next 3 months or so then it will be archived. I dont know whether I can upgrade the os on my MacBook to 10.15 Catalina to access these apps and maintain Boot camp as it is. The alternative I guess is to take an excecutable image and install on an external drive and work with Movave this or install Catalina on the external drive instead and install Lyx + apps on that which represents the lowest risk . I've used Winclone in the past for archiving -- to your knowledge are there others I could consider ?. I was going to upgrade my MBP to the M3 processor until I heard about the pending M4.

Just one more question please - I went in via recovery since I can select the install target drive but it offerred Big Sur which is crazy - can I select Catalina thro recovery ? -- I am trying to avoid the app store route as I am unsure about stopping the install process and I get dislexic fingers at the most inopportune times
