I have purchased alien: isolation™ - the collection for my iPad. Many of the iPad apps do run on the Mac, so why can't I use what I already purchased? Seems like they can run, so why not?

Not all apps. Compatible apps are labeled with 'Designed for iPad/iPhone', and it must be an Apple silicon Mac. See below:

It is always up to the developer and they choose where they want users to be able to use the apps they make. It is true that many iOS apps run on Macs because Apple makes it easy to support all platforms, but that does not mean that the developers have to make their app available on all platforms.
