Are there any steps to set up a cellular Watch for GPS-only use?
I've canceled the cellular service and removed the cellular plan from the watch. The watch is paired to my iPhone.

As soon as you have deleted your cellular plan for your Apple Watch in the Watch App on your iPhone, your watch is "GPS only".
If you have set up Wi-Fi calling for your Apple Watch, you can receive and make phone calls on your watch, if the iPhone and your watch is connected to a Wi-Fi network, your iPhone once was.

AFAIK, no other steps should be necessary.
The watch also rang with a call on my nearby iPhone. It appears to be functioning as GPS-only.
