Can I delete transaction history
I just want to see if I can delete transaction history on my Apple Pay card.

When you say <Apple Pay card> do you mean Apple Cash card or are you referring to the credit/debit card you used with Apple Pay? Transactions completed using Apple Cash are more detailed and are stored as individual transaction by month for the current year and then by year in your Wallet app. They cannot be deleted.
Cards issued by other banks sharing with Apple what they feel is necessary. Some banks share more details than others. Generally, you only see the last 30 days of transactions, but in some cases more or even less. Discover shows a more detailed list than any other bank that I’ve observed.
In no instance have a found a bank that permits deleting their transaction history. The Apple Support article I linked below may be of interest also.
