How can I maintain disk partitions when erasing a computer hard drive to sell?

My MacBook Air 11 (early 2014), now running Big Sur (version 11.7.10) came with the hard drive partitioned in two, with one the Mac HD and the Other for Data.

How can I maintain the partitions in the hard drive, when I erase the drive to sell it?

Is it possible?

There is no need to do that. Just follow the instructions in What to do before you sell, give away, trade in, or recycle your Mac - Apple Support. That Mac won't have Erase All Content and Settings so follow the numbered steps that appear next.
