My Grandma passed away in March and I still have her conversation in my Messages but when I went to look at the messages it said the message was read?! She has a Moto 5G and I have an iPhone 11.. I know you can't get read receipts from Androids because iPhones dont have RCS yet but like.. what?

I agree, that it is strange. While I do not have an answer for you, I would like to see a screenshot if that is possible without providing personal information. Did you have an Android phone previously where the messages were imported into the iPhone when it was set up?
Not sure why you are seeing it look like that. The Read receipt would be under one of the bubbles that you sent, not in the text that appears to be in a scrollable window. Never seen it look like that with even the font size not matching what is shown in the Messages app.
