So I was looking at my data history and it was all my apps and then a category called uninstalled apps which fine I knew I have deleted some apps but then I rested the statistics yesterday and this morning I go to check it again and it still shows that uninstalled apps are using data and I haven’t deleted anything. Please help should I be worried?

It shows data used over this period so the data used by that apps is most likely data used by the apps when they're still installed. You might want to restart your iPhone to see If the issues persists, that way you clear the cache.
Worrying is not needed, iPhones are really difficult to hack due to iOS'ses built in security
