Does it matter that I am left-handed for Apple Watch?
In setting up, the watch wants to know if it is on the right hand or left. Does it matter that I am left-handed?

No. Wear your Watch on the arm you prefer, and mark the left/right wrist options accordingly. Refer to Change language and orientation on Apple Watch for additional details.
