I have my phone set for light mode and auto dark/light mode turned off. Safari I have dark mode off as well and whenever I do a Google search it shows up in Dark Mode. How do I get Google to show light mode?
This isn't an issue with your iPhone or Safari, it's an issue with Google not being able to automatically detect your system theme.
To resolve the issue, do the following:
If this doesn't work, (still on Google.com) click on Settings > Search Settings > Other Settings. There should be an switch to turn dark mode on/off
When searching on Google, you can click the hamburger icon (three horizontal lines) on the top-left of the screen to reveal a menu. From there, click on "Dark theme" to toggle the setting.

Are you using the Dark Reader for Safari extension (or an alternative)? It may override the settings. Press the extension icon in the tab and tap the extension name to open its settings. Then select an option to turn off dark mode. Here is how it looks with Dark Reader for Safari:
So all of that is off and still is in dark mode.
