How to remove this blue icon next to time?

You have Voice Control on. Go to Settings/Accessibility/Voice Control and turn it off if you don’t use it. Here is more information about Voice Control→Use Voice Control to interact with iPhone - Apple Support

It is probably the icon for Voice Control. Go to Settings > Accessibility > Voice Control and disable the functionality.
