I can't look at any music on iTunes (Windows)

I usually use Apple Music app for PC but I want to make a cd to play in the car and I can only do that on iTunes because my Apple music is ALSO broken (I can't show checkboxes despite turning it on in preferences). On the side bar it only displays (under Library) Podcasts and Stations. I have uninstalled it and reinstalled it and downloaded the one from the apple website instead of the Microsoft store and the problem still persists. I have had a look online and cannot find any mention of my issue at all.

Have you uninstalled Apple Music, along with Apple Devices assuming you had it as well? Even if you have Apple TV on there, any of the three will induce the current behavior of iTunes you are dealing with.

You mention that you deleted Apple Music, but perhaps all that you have done is delete the music being offered to you via Apple Music. I think perhaps it would be wiser to end your subscription plan to Apple Music instead, which would ensure that you are not charged for a service that you're no longer using as well as allowing you to go back to your own library.
