When i connect my iphone 15 pro to my bmw, it connects via wifi. My iPhone then becomes inoperable for other activities like maps etc because it wont switch over to using cellular. I do have wifi assist on

If you use wifi, your iPhone will prioritize the wifi over the cellular data. Try and turn on wifi assist
Settings > Cellular, and then scrolling all the way down to the bottom to find Wi-Fi Assist.
And then turn off the iPhone and restart it and see if wifi assist is still on. Then try and see if your issue does still persist
