Sign out option is greyed out. We have disabled screen time limits, content restrictions, and family sharing, still cannot sign out. We do not have iPhones, we are android users. Any help is appreciated!

If you have set a ScreenTime Passcode, this must be removed before you will be able to sign-out from your AppleID account:
Settings > ScreenTime > Change ScreenTime Passcode > Turn Off ScreenTime Passcode
Having disabled the Passcode, you should be able to sign-out from your AppleID/iCloud.
