Can someone else's AirTag connect to my iPhone without my knowledge?

I received a notification that an AirTag was detected near me, and it seems like it was somehow connected to my phone and followed me for 5 hours, as notification is showing where I was moving and it says that AirTag was last seen after 5 hours. I was in my car with a friend, and we don’t own AirTags. Also, she didn’t receive the notification, and she is also using an Iphone. We were on a wedding, going from one location to another and there was a lot of people there, is it possible that my phone connected to someone else’s AirTag and that person was driving near by when we were moving, and then left the wedding after those 5 hours? Or someone was tagging me personally? I don’t know how this works, and would like to learn how to prevent my phone from connecting to other people’s AirTags?

Your iPhone, along with millions of others, participate (by default) in Apple's "Find My Network." As such, it acts as a relay to send a nearby AirTag's ID, along with the phone's GPS location, encrypted to the Apple servers over the Internet. Think of your phone as a crowd-sourcing device in this case.

More to the point, if an AirTag not owned by you, is within Bluetooth range (~30') of your iPhone, you may receive an alert. Typically, you don't in this scenario. When you do get an intentional alert is when that tag is "following" you. That is, it stays within that Bluetooth range as you move about. Although not common, tags can be placed on something on your person (clothing, purse, etc.) or on/in your car. This is the most likely scenario where you would get notified.

Unfortunately, some nefarious types will use these tags for tracking people. This is why Apple included the alerts.

Your phone does not actually connect (pair) with someone else's tag. It just reacts when there is one nearby.
