How to stop the iPhone notes app from trying to edit practically everything

If you want to turn off autocorrect or other keyboard features, go to Settings > General > Keyboard. Under All Keyboards, you can see all of the keyboard features. In your case, I would recommend turning off Auto-Capitalization, Auto-Correction, and anything else you want off.
