Why is my iPad typing everything that everyone is saying around

That's why. Dictation listens for any voice and types what it hears, anything it hears. What did you expect it do?

You can pause dictation by tapping on the microphone at the bottom right of the keyboard in any App

Then it should not be writing anything you say, only what you type.

Does this happen in every app, or only a specific one?

Are you using a physical keyboard or the onscreen keyboard?

If using a physical keyboard does it have a microphone key? You may be enabling dictation by mistake on it.

If using the onscreen keyboard, is the keyboard visible when this happens, or do you see the dictation screen instead?
