As a self-employed small business owner I need an easier way to download my purchase history then just taking a screen shot on phone/laptop. This is essential to all of us. How do we do this easily?

You cannot. However, Apple sends you an email receipt for everything you buy. You could save those for review.
You can also let Apple know what you'd like to see here:
Like download like a pdf file or other file extension isn’t possible but you can get it from purchase history in the AppStore , go to your Apple 🆔 profile / purchase history and take screenshots from everything you have purchased
