How to make Roku Stick connection to apple mac mini to view on LG monitor
I have a mac min computer which I would like to know what is needed to be able to view/stream movies on my LG monitor using a Roku stick.

The HDMI port on the Mac mini is for video output from the Mac to a monitor. Not for video input from a Roku stick or similar streaming stick.
If your monitor has multiple video inputs, at least one of which is a HDMI input, perhaps you could connect the Roku stick directly to the monitor, and connect the Mac to another of the monitor's input ports. You haven't told us which monitor you have, but many monitors have multiple inputs and types of inputs – plus on-monitor menu controls that let you switch between them.
E.g., if the monitor has a USB-C (DisplayPort Alt Mode) input, you could run a USB-C to USB-C cable that was rated for DisplayPort from most recent Mac minis to the monitor. You can also get USB-C to DisplayPort adapter cables – even USB-C to HDMI ones (in the event that the monitor has two HDMI inputs).
