If I look at the information of Pictures in Fotos.app 7.0.0 made with my Fujifilm X-T1, Fotos.app shows the focal length converted to 35 mm format, e.g. if I made a foto at 300 mm focal length the value shown in the information to that picture is 450 mm. Can I set Fotos.app to show the value unconverted?

The focal length (Focal Length) and the effective focal length (Focal Length In 35mm Format) are usually both kept in the Exif metadata, and Photos uses the effective focal length (apparently-- I didn't know!) You can't change what Photos does with that. There are Exif readers and editors that you can use to alter the Exif fields before you import to Photos. Don't try to use these to work on pictures already inside the Photos Library package--they would probably really mess up Photos.
ExifTool Reader is free, and it lets you inspect all the fields to see what's really going on. Editors often have a free limited use before paying to free them up. Don't you love "in-app purchases?"
