why do these messages all have different colors from not just my messages but my contact who also uses iPhone?

It most likely means that, at the times the messages were green, the person you were messaging lost their data connection. Without a data connection, the messages will get sent as SMS (green) messages.

No, that's not what it means. If someone had compromised her Apple ID and was sending messages as her, they would be blue.
