Apps do not usually take up too much space. macOS prefers to have applications located within the Applications folder. While some apps may work, or partially work located at another location, it is really not worth it.

If space is limited on your internal SSD, then you probably purchased a Mac with insufficient storage. You may want to purchase a system with more resources since current Macs cannot be upgraded after purchase.

You can also move some macOS libraries which typically contain large amounts of data to external media. Here are some Apple articles with instructions to move specific libraries to external media:

Move your Photos library to save space on your Mac - Apple Support

Move your iMovie for Mac library - Apple Support

Change where your music files are stored on Mac - Apple Support

You can also store other large files & projects from third party software on external media.

Leave all your applications on the macOS boot drive in the Applications folder for the smoothest operation of macOS.
