Cannot sync/transfer all data to new iPhone

About a month ago I went to my local service provider’s store to get a new iPhone. Had all sorts of issues (they initially gave me - without ever asking what storage capacity I wanted - a phone that was less than my current phone at the time, so of course nothing would sync then). Ended up with an iPhone 15 Pro. I did the quick/smart setup to try to set up the new phone and it transferred effectively nothing over. The store employee told me I have to keep going into Settings > iCloud and manually syncing apps through there repeatedly to get everything to transfer. I’ve tried backing up my old phone to iCloud and the time expected always keeps increasing (was up to 42 hours at one point) until eventually it just stops attempting to back up. I have an old (2015) MacBook Pro that does not have storage capacity to back my phone up manually, so that’s not a possibility. I went to the next nearest store of the same service provider and they told me they couldn’t transfer my data between phones because “they share their internet with all the nearby businesses and it’s so slow that it wouldn’t work”.

It has slowly (and seemingly on its own) transferred some of my photos (some of the oldest, and some of the most recent) and text conversations on its own, but that’s it.

What are my options?

Apps don't transfer from iPhone to iPhone, only the app data along with app links to the App Store gets transferred.

After the transfer is complete (Quick Transfer, iCloud, or iTunes) depending on the internet speed all apps will get downloaded from the App Store automatically. If an App does not exist anymore in the App Store or the iOS version is not compatible with the App then the App data that is transferred cannot be accessed any further.

Apps & Settings --> Apart from the Apps following will also not get transferred between devices

  1. Content from the iTunes and App Stores or PDFs downloaded directly to Apple Books
  2. Content synced from iTunes, like imported MP3s or CDs, videos, books, and photos
  3. Data already stored in iCloud, like iCloud Photos, iMessages, and text (SMS) and multimedia (MMS) messages
  4. Data that are synced to an email account such as Google, iCloud, AOL, Exchange, Outlook, Yahoo, or any Other email client server that supports contact synchronization. e.g. Contacts, Reminders, Notes, Calendars
  5. Face ID or Touch ID settings
  6. Apple Pay information and settings
  7. Apple Mail data
  8. Apple Music
