Hi FLelmorp, and welcome to the Apple (user-to-user) Communnity!
Re: "Assistive Touch: Now if I turn it off the only way to turn it back on is to reboot each and every time".
Wondering which iPadOS version you are using on your iPad: If update available : Updating may or may not help.
Eg: You could look in Settings > General > Software Updates to see if there is an update waiting to be installed.
If so, you may want to back up your data for safe-keeping, before updating your iPadOS.

Also: For iPadOS 17 (or If needed: for accurate info., choose an earlier iPadOS version at the top of the article):
Apple support's article: Use AssistiveTouch on iPad - Apple Support
says:
"Siri: Say something like: “Turn on AssistiveTouch” or “Turn off AssistiveTouch.” Learn how to use Siri."
or
"Tip: To turn AssistiveTouch on or off quickly, you can set up Accessibility Shortcut, then triple-click a button".
All the best :-)
