is there a way to know if a person in possession of my iphone and my password has downloaded or shared info or files?

If a technician had my phone and my password for several hours, is there a way to know if he downloaded or shared any information or files of my iPhone 14? Is there some kind of log or something?

Nope there is not. You can view if there is another device logged into your account by going to Setting > [name on top], and scroll to the bottom. There will be a list of all devices that are currently signed into your Aople ID account. You should also change your Password. There is no need to provide a technician your Apple ID Password. If that was done, they are likely not an Authorized Service Provider.
