On my screen everything have a double inscription like on every apps I have a second word below or above the app like setting ,I have the word setting write above the app

I see that you are using Voice Control: Use Voice Control on your iPhone, iPad, or iPod touch - Apple Support. The double text your are seeing is the overlaid name to make it obvious (see below):
To hide overlays, say “Hide names.” I think you can also do that in Settings > Accessibility > Voice Control > Overlay.
