When I go to Itunes on my windows, and go to my toolbar only podcast and audiobook is available my music option is not. How do I add it or get it back.

I think you need to unsubscribe from Apple Music.
You have any of the three of Apple Music, Apple TV, or Apple Devices installed. Uninstall all of those you have and your music will be accessible again in iTunes.
