Our company uses Gmail Workspace for email. I often find that Apple Mail is very slow to sync with Gmail. I do not have this problem on my iPhone.
Today i even installed MS Outlook on my MacBook Pro to try in place of Apple Mail and it doesn't seem to experience the same issue.... what's going on here?

We've had the exact same problems in our organization for several months now.
I have 6 gmail accounts under Apple Mail, and only the "corporate" one, a Google Workspace Enterprise Standard account, experiences the issues that the OP has described.
We've tried everything under the sun to diagnose and fix the problem, but to no avail.
Currently the only "fix" seems to be switching to a different email client (eM client in our case), but I'd love being able to go back to Apple Mail for the consistency in its UI.
I've been told by my IT department that it's because i have a large volume of emails in my inbox.
I've worked for the company for over 5 years, so yes, i have lot of emails. The solution proposed was to delete my emails - which i don't intend to do, as there are many important backups i intend to keep.
Seems odd that MS Outlook for my Mac doesn't seem to have the same trouble syncing this volume of emails as Apple Mail...
Probably a lot of factors that you have to take into consideration, from how busy your companies routers are to network traffic and your ISP and Googles servers.
I use gmail and have no problem downing all the spam from Google
