ChatGPT is not used by dictation. Or currently by iOS at all.

You can certainly turn off auto-correction features in Settings>General>Keyboard. The settings you want to experiment with include Auto-Correction, Smart Punctuation and Predictive Text.

You may also want to reset your personal dictionary. Go to Settings > General > Transfer or Reset iPhone. Tap Reset, then tap Reset Keyboard Dictionary.
