Google Pay and Apple Pay and iOS17 on an iPhone 8:

You need iOS 15 or later to use Google Pay on an iPhone. You iPhone will only go to iOS16. So, it it compatible, as of this post. iOS17 is a not an option for your iPhone: iPhone Models Compatible with iOS 17 - Apple Support
