13" MacBook Pros using plain M1 and M2 chips only support one external display.

14" MacBook Pros using plain M3 chips currently only support one external display. There reportedly will be an update that gives them the same "lid closed" capabilities as the M3 MacBook Airs, but Apple has announced no release date or timeframe for this update.

If you have one of these recent low-end MacBooks, that may explain why you are having problems with using two displays.

Do you have a iPad a newer one from generation 4 to current? That can works and slove your problem. Also I am thinking that it may be in the sharing the screen setting that something in the setting may not be working correctly.

  1. Locate the right ports on your monitor and use the correct cables to connect your Mac device.

2. Connect a Thunderbolt/USB-C display: connect the display to a Thunderbolt/USB-C port on your MacBook Pro

Also, maybe try find a Thunderbolt/USB-C that have two spot for the both external adopter that can hook up to the both montior.
