Files on your iPhone are encrypted through the password that locks your iPhone. That encryption doesn't stop unless you turn off the passcode function on your iPhone. Deleting files changes nothing about the iPhone's encryption.
The deleted files are gone. The only time your data on your phone stops being encrypted is if you remove the passcode entirely. Don't do that.
So deleted data is not recoverable even with forensics

What makes you think anyone would try to do that? Do you have trade secrets on your phone? Or plans to influence the 2024 presidential election? Or a map to the treasure of Oak Island?

So the deleted files are still encrypted? And our there encryption keys discarded
