Easy to hack a locked iPhone?

Recently had my locked (6 digit passcode - not just something easy either) iPhone 11pro pickpocketed in Quito. It took me about 90 min to get somewhere where I could do the "lost my iPhone" activation. In that time, my phone was not only hacked but multiple accounts were compromised. A bit shocked these phones that apparently used to foil the FBI are now hackable in under two hours by petty thieves. Any updates on security?

iPhone 14 Pro, iOS 17

There are a few ways thieves can compromise the accounts on your device. Either the person who pickpocketed you was keeping an eye on you to watch you manually type in your passcode. (Which is what Stolen Device Protection helps protect against About Stolen Device Protection for iPhone - Apple Support) Or most likely, with a physical SIM from your 11 Pro, can be swapped onto another phone and be used to reset your accounts' passwords using your phone number. Besides those two methods, it would be very unlikely that they were able to compromise the security of your iPhone, especially if it's also on the latest version of iOS.

The most likely explanation is that someone managed to see you entering your passcode prior to lifting your phone.

Once in, they would of course have access to all of your email accounts and it's a simple matter from there to go through and reset passwords on your accounts since they have the device and can receive text messages and emails for any that used 2 factor authentication.

Yes it had the latest OS.

I think back through the day and as I also have FaceID (no they didn't wave it in my face after stealing it!) I can't think of when I would have entered the passcode anytime recently before the theft.

Once they got in I can see how they accessed everything but I'm still baffled how they did it in the first place. I did have a physical SIM in it.

They got in my Outlook email, changed the password and username and security settings and now even Microsoft can't recover it for me. On the hunt for a better email provider now.

They sent transactions in my PayPal. They were in all my social media. Luckily no Apple Pay set up and my banking apps had separate secret passwords.

I was locked out of my AppleID while travelling (even after I bought a last minute new device) cause I couldn't do two-factor authentication without my phone number but once I got home and had access to my old phone as a "trusted device" all my Apple ID stuff seemed ok.
