When I search my apps from my outer screen (i’m not very technical, but it’s the one to the left of my sign on screen) and I type the first letter of an app that I want to pull up quickly (example United Airlines) it shows the app when I type ~ or( or m or even x. so my question is what is the criteria that it searches for to pull up an app when none of those are located in the name of the app?

Surprised you get to view an app when using a letter that is not the first letter of the app name ?
Generally, you would need to type in the correct name of the app in the search field.
Sorry I don't know of any searh criteria that is used, other than the correct name of the app entered letter by letter.
Seems you would be searching for apps in the App Library.
Maybe your App Library just knows intelligently what you want ?
Apple doers say:
"Note: The apps in App Library are organized in categories intelligently, based on how you use your apps."
Here's how Apple describes the search process:
"To Find and open an app in App Library
If a category has a few small app icons, you can tap them to expand the category and see all the apps in it."
