I'm looking for the pull down colored flags in Apple Mail. how to get them back?

I used to have a pull-down menu that allowed me to attach colored flags to individual emails to alert me to their contents (red for ASAP green for $$, etc). They no longer appear on my MacBook Pro Mail version 16, iOS 13.6.6 (yes I know this OS has been updated). How can I add this feature to Mail?
