Currently for Safari on iPhone, only 5 search options are available: Google, yahoo, bing, duck duck go and Ecosia. I want to change it to a search engine that is not on their list. How do I do this?
After the recent Google deletion of instant search terms, I no longer feel comfortable with their search engine. If this is not yet possible, Apple please make this an option.

You cannot. Only the available search engines can be used directly from the search bar.
You can create a Home Screen shortcut / bookmark to the search engine you want to use, so Safari opens to that website every time.
In Safari, open the search engine website you want to use, tap on the share icon, and then on Add to Home Screen. This will create a new App icon on your home screen that will open Safari to that specific website / search engine.

You can offer feedback to Apple, and if enough people do, they may add the search engine, or a way to add new ones by users.
