I have an Apple Watch series9 and iPhone 13. The watch app will not open any of the options in mail.

Did you try to force restart your watch by pressing and holding the Digital Crown and the Side button together for about 10sec, until the Apple logo comes back again?
And the iPhone as well?

With your help I haven now got it working. I reset the watch and then paired it again with the phone with success. Again much thanks for your help.
Both devices have been updated to the latest watchOS 10.6 and iOS 17.6, and restarted after that?
Any restrictions set up on your iPhone in Screen Time, not allowing changes in account infos?
No restrictions and both have latest iOS’s.
