I bought this iPhone in another country but I moved to India. Even though I moved to India, my Apple Store Apple ID didn’t change. I can’t change it as I am a child in family sharing but neither can my parents. How do I change my AppStore country and region in family sharing as a child?

That's interesting because, as a test, my 10-year old was just able to change her Region to one different than mine. And she did not have to leave our Family Sharing.
Perhaps it is because I allow here to make account changes? (Screen Time / Content & Privacy / Preference Restrictions / Toggle on Allow Account Changes)
Might want to chat with Apple Support here, as Apple is a little murky (“might”) about whether this can work or not.

While I’d guess the answer will be to leave Family Sharing, let us know what Apple indicates.
Family Sharing requires that all group members have their account set to the same country or region. To set a different country than the others, you will have to leave the group.
I can’t explain that. Please contact the Apple Support staff for more detailed inquiries about what is possible, and what should and shouldn’t work, with regard to the country setting of Apple ID accounts (not device settings) in Family Sharing groups.
There is nothing like preference restrictions.
