hey so I want to get apple one premier but I only want the Apple Music and the 2tb of storage but I don’t know if I can choose what subscription I want or if I have to pay for all the subscriptions

If you just want 2 of the included subscriptions, then don’t get Apple One, and get the subscriptions you do want individually.

Yes. You can get Apple Music Family as a stand alone subscription and set up Family sharing to share it.
Apple One is not required to share subscriptions.
