Got it! I misunderstood your post in which you said changing it from the Mac worked.
Workarounds are better than nothing.

So you're saying that you haven't found a way to change the default font?
I found a way. Set the font in Notes on my Air, and it shows up on Notes on my phone. Happy to live with this.

Highlight the text you want to change, then right click on it.

That changes the existing text. It doesn't change the default.
