Backing my phone without the use of wifi
Is been day I want to back up my phone but it always saying Wi-Fi which I don’t use wifi

Then, your only other option would be to connect your iPhone to a Mac or PC using a cable when you want to back up.
So, you will be using a wired connection......not Wi-Fi.....to back up your iPhone.
