How can I stop my iPhone from editing and overexposing my photos?

I am so frustrated. I have an iPhone 15 which constantly edits, saturates and over exposes my photos automatically. I enjoy photography and have used previous iPhones with no issue. This is complete frustration as many of my photos end up looking awful and I have to de-edit them, often not successfully.

Can anyone advise me on what I can do to fix this infuriating feature?
