My phone will not update because of storage however I have plenty of storage shown

If you try to update and you don’t have enough storage the update screen will say you don’t have enough storage.

if there is an older version of iOS that was not installed on your phone.

Settings > General > iPhone Storage> very bottom of the list see if there are any old iOS update listings> Delete. Restart your iPhone and try again

You may not have ENOUGH for the update.
