You can't edit the holidays in a holiday calender you've subscribed to. However, you can use that holiday calendar as basis for creating one you can edit:
Create Your Own Holiday Calendar From A S… - Apple Community
There are also sites such as icalshare.com (which seems to be down now) and calendarlabs.com (does have annoying ads) that have lots of calendars you can subscribe to. I'm sure there are others.

To remove the holiday calendar for your country or region, tap Calendars at the bottom of your screen, then select or deselect the holiday calendar for your country or region.

This is the screen when I open the calendar. I don’t see anything at the bottom of my screen to select or deselect.
Click on the top left calendar symbol and it will bring you to this, hope this helps! ⬇️
