The View > Show Hidden Photo Album is always greyed out on my Macbook Pro. I am able to hide photos and have hidden photos in the past, but I am unable to ever view any of my hidden photos. For all intents and purposes, hiding a photo deletes it from view in my Photos app.

Have you checked, if the Hidden album is already visible in the Sidebar of Photos?
Only then the command "View > Show Hidden album" will be dimmed. Is the sidebar visible, when you open Photos? If not, make sure you are not in Full Scree mode. then enlarge the Photos window as large as possible, if the sidebar is still not visible.
Which system version is installed on your Mac?

That fixed it! Thank you! I had to enlarge the Photos window to view the Sidebar, and only after viewing the Sidebar would the "Show Hidden Photo Album" no longer grayed out.
