I would like to record voice memos on my macbook pro m2 using an external sound card (scarlett 2i2) which has two mono inputs - and I am using only one mic in channel 1. Voice memos always records both channels as a stereo pair so one channel is muted. Is there any way to change those settings so voice memos records only channel 1 as mono?

I don't think you can change Voice Memos directly, but it sounds like you need a copy of Loopback:

It's software that supports Audio Routing - you create rules that map any input device/channel into a virtual output device.
You can use this to combine any combination of input channels into any combination of output channels (or maybe duplicate the Scarlett Channel 1 input to both left and right output channels - you'll need to experiment).
Either way, it creates a virtual input device that you choose in System Settings -> Sound -> Input Device (for some reason Voice Memos only reads the system input device and does not let you choose another device on the fly).
There may be other solutions out there - SoundFlower comes to mind, but it doesn't seem to run on the latest Apple Silicon/OS version, so I couldn't test it.
