Here's a couple of suggestions you might want to try:

(1) In your iPhone's Watch Settings:

You might want to check you have enabled a Trash Mailbox on your Watch.

Tap the “Watch” app icon on your iPhone's Home screen

With the Watch screen active, scroll down and tap on “Mail”.

On the Mail screen, tap “Include Mail”

Only ticked Mailboxes will show up on Apple Watch

then scroll to the bottom to

• "Delete a message: Tap Trash Message.
• If you’re looking at the message list, swipe left on the message, then tap ."

If you swipe on a message thread, the action you choose (Trash, Flag, Read, or Unread) applies to the entire thread."
