FYI, be careful with that modification. Sometimes you may find some odd issues at the most inconvenient time. For one, I believe I recall some people having issues restoring from a TM backup with this configuration. Plus sometimes a simple macOS update patch has been known to cause boot issues where it reconfigured the system to recreate an empty user account on the macOS boot drive (this happened multiple times with macOS 12.x Monterey)......it was not as easy to reconfigure and some users were left with unusable systems for several months because they could not fix their system. Eventually the macOS updates stopped breaking that custom setup.
Even though macOS allows you to make this custom configuration, it does not follow that it is well supported. From my own personal experience, macOS does not like deviating too far from system defaults. Keep in mind that macOS is becoming more & more like iOS
I CANNOT believe how my Mcpro 2019 runs so smoothly with Ventura and how Sonoma made it run SO SLOWLY with a kernel panic and overheating.
Sonoma may not be the problem. It seems like you have a hardware issue which is probably the main cause of the performance issues. It is also possible software issues could be playing a part.

Yes, they are compatible with an iMac Pro 2017.
Recommend DO NOT update without a Time machine Backup.
That is always good advice. In fact people should always have frequent and regular backups of their computer and all external media (including the cloud) which contains important & unique data. There are a lot more new ways to lose access to the data on the internal SSD of the recent Macs due to all the hardware, software, and security changes.
