You'd back up what-need-be, and then perform as interacted here, including the iCloud logout and backup creation: What to do Before you Sell, Give Away, or Trade in your iPhone, iPad, or iPod touch - Apple Support. Create a screenshot of each Home Page, and then email it to yourself. That way, you can know what apps to place back on each Home Screen, after the reset.
