How can I set up my Apple Watch without the old Gmail credentials?

So basically I used to have an iPhone 11 so I set up my Apple Watch to that but now as I’m trying to set it up it’s asking for number or Gmail and password but my phone was lost and the Gmail number and password were too

The Apple ID used to set up the Watch is the only ID that can remove the Activation Lock that you are encountering. Activation Lock prevents lost or stolen watches from being used by others.

Follow these instructions for help in recovering the old Apple ID.

If you can't recover that old Apple ID, your only alternative is to take the watch, your photo ID and the original watch receipt with the serial number to an Apple store for Apple to unlock the watch. But if you don't have the receipt, don't waste your time going to the store, Apple can't unlock the watch.
