When I go to a website I can’t just click on my email address to get in, it always says “hide my email address” so I have to manually type in my email address every time. My email address used to just pop up & I could just click it and it. Would go right into the website where I needed it to.

You should still see the option for your email address as long as you have saved it for the website. As seen here, the Hide My Email option does not replace your saved email address, but will be there as an additional option. If there is no saved email for the website, then Hide My Email will be the only option showing. Turning off Hide My Email is not possible.
